

CAFE DE OLLA
Cafe de olla is part of the Mexican Revolution (1910-1970). Cinnamon, brought to Mexico by the Spaniards, gives a sweet aroma to coffee and a spicy touch which was necessary for the fighting of that time. Given the constant conflict situation, coffee was prepared for many by the “Adelitas”. In large clay pots they mixed the coffee beans, cinnamon, and piloncillo (compressed brown sugar).
